So the answer that came out of my mouth is "because I go and become a vegetarian." So thats it. GoVege!
<!--

Wow! I'm so flattered. Thoughts of him passing his swimming bronze test after much hard work, and making himself useful by mopping the floor for me crossed my mine, and even when the most angelic part of me had wanted to believe that it is true that his has finally turned a new leaf, but there is this tiny part of me which still think that something is amissed.

I took a look at his assessments books and there it was, the answers was nicely written. Word for word. This vege mum took a pair of scissor and cut away the answer sheets at the back. Leaving no chance for repeated mischieve at all. No. Absolutely no. Whenever there were gathering they will definitely persuade us to eat meat just for this special occasion. Then there were also the occasional good intentions and gentle reminders about proper nutrients especially for the children.

On such occasions, digging a hole on the ground and stick my head in is not an option. Extreme action like disappearing on an important day such as the first day of Chinese New did crossed my mind. Yes, if they cannot respect your wishes and philosophy, then they do not respect you as a person and do not deserve to be respected by you. Drastic times call for drastic measures. But we do know that in real life it doesn't quite work that way. It would create a wrong impression that vegetarians are anti-social. So what was I thinking?

So the only way is to put on that fakest of the smiles and hold your head high and don't argue or else all relatives will gang up against you. As time goes by they will accept the fact so in the mean time, patience is a good virtue.

Happy Chinese New Year to all!
<!--

Science and technology have isolated compounds in plants and vegetables that have literally been our life-savers. These are phytonutrients which all fruits and vegetables produce because their means of survival in the environment is through the release of disease-fighting phytochemicals. Phytochemicals stimulate the production of protective self-repairing cells in plants. They also produce the same kinds of responses in humans. For example, they release protective enzymes that inhibit cancer-producing substances, thus reducing our susceptibility to disease. It makes sense for us to harness the powers of plants in our diets. Four sources of phytonutrients that cannot be ignored if we want to remain healthy and cancer free are berries, cruciferous and dark, leafy vegetables, soy and red wine.

Berries, such as blueberries, cranberries, strawberries, blackberries, raspberries offer the highest sources of phytonutrients. They all produce a natural substance called ellagic acid which has been shown to be a good defense against carcinogens because they suppress tumor development. Blueberries have the highest antioxidant content. High in flavonoids, they also provide powerful protection against prostate cancer. Two and a half cups of fresh strawberries a day can supply enough vitamin C to help restore sperm production in men. Cranberries have been known to prevent cystisis, a painful and often recurring urinary tract infection in women. A study involving 72 postmenopausal women found that 10 ounces of cranberry juice every day reduced the likelihood of bladder infection by 58%. Cranberries have also been shown to reduce stomach ulcers and lower LDL cholesterol levels.

Cruciferous vegetables (like broccoli, Brussels sprouts, cauliflower) and dark leafy vegetables (like swiss chard, spinach) also have high levels of antioxidant phytonutrients. In a study conducted by New York's Strang-Cornell Cancer Research Laboratory, women who consumed a diet high in cruciferous vegetables experienced a dramatic drop in estrogen levels, which means that these vegetable are definitely powerful tools for fighting against breast cancer. The assumption is that the phytochemicals in these vegetables deactivate potent estrogens, thus preventing estrogen-sensitive cells, particularly in the breast , from developing tumors. Sulforaphane, another phytochemical in cruciferous vegetables, triggers a self-defense system in the body that acts to detoxify carcinogens. Spinach contains four times more beta carotene than broccoli and is a good source of vitamins C and E. It also has high levels of photosynthetic proteins which convert sunlight into energy. Researchers at the Massachussetts Institute of Technology are harnessing the power of spinach in a new direction--creating highly cost-effective solar panels.

Soy is another phytonutrient rich food. Soy products contain genestein, which has been shown to have strong anti-cancer properties. It contains as well phytoestrogen, which has been shown to reduce the risk and spread of prostate cancer. Researchers suggest that the phytonutrient isoflavones, like phytoestrogen, may reduce the risk of breast cancer. Another isoflavone compound in soy called daidzein has also been found to improve cholesterol and triglyceride levels in women. A study conducted at the Cedars-Sinai Medical Center in Los Angeles has uncovered evidence that this estrogen-like compound is the main reason for soy's healthy effects. Women with low estrogen levels seemed to have benefited most from daidzein, which reduced LDL cholesterol and total cholesterol levels, leading researchers to recommend that women include soy food products as part of their cardiovascular risk reduction strategies.

And last but not least is the phytonutrient, resveratrol, found in red wine, that literally makes wine drinking a cancer-fighting measure. Resveratrol is present in the leaves, twigs and bark of the grape vines. And red wine, which is fermented from grape skins, seeds and twigs tends to have large quantities of these cancer-fighting substances. Resveratrol has also been demonstrated to be a potent antioxidant (more potent than vitamin C alone) which can act synergistically with vitamin C, thus enhancing the effects of each. It also prevents the formation of blood clots and promotes the formation of new dendrites in the brain.

Let us put all these phytonutrients to good use. Why not sit down to a hearty soy burger, broccoli spears and cauliflower salad, warm berry compote and a glass of red wine? Yummy! Life cannot be better!

Mary Desaulniers
<!--

Nutty flavored flaxseed oil is highly concentrated with this heart healthy unsaturated fat. Some of the benefits of Omega 3 acids include its positive effect on high blood pressure, the immune system, inflammatory disorders, and some cancers. Flaxseed oil has also proven beneficial in treating in treating eczema.

Both the seed and oil variety of flax are heart healthy due to the Omega 3 fatty acid. This type of fat is important to the development of cell membranes and the regulation of blood pressure. It also has a positive effect on lowering the body’s bad cholesterol levels and might even lower the chances of blood clotting thus preventing heart attacks.

Flax seeds themselves have even more health benefits than the oil. These seeds have a hard shell and are slightly bigger than sesame seeds. The seeds contain fiber, protein, minerals, B vitamins and lignins. Lignin, a phytonutrient, is believed to have anti cancer properties, especially, estrogen linked varieties such as breast cancer. Lignins are also noted for their antibacterial, antiviral and antifungal abilities.

Flaxseeds are high in fiber which can be taken regularly as a natural laxative and help prevent colon cancer and ease the symptoms of Irritable Bowel Syndrome. This type of fiber is also believed to be beneficial for those struggling to maintain their blood sugar levels.

Women may also benefit from adding flaxseeds and flaxseed oil to their diet as there are some studies that suggest it assists in promoting natural ovulation as well as having a positive effect on hormones which eases pre-menopausal symptoms.

After reading about some of the benefits the flaxseed offers one may be interested in ways to incorporate them into their diet. First, keep in mind that the seeds need to be ground to experience their health effects; otherwise they just quickly pass through and exit the body. Also, flaxseed oil, like all other oils high in essentially fatty acids is not meant for cooking with. The heating process has a negative effect. Simply add the oil to foods once prepared such as vegetables and pastas.

As mentioned, the flaxseeds can be ground much like flour and therefore can be baked into many foods, including breads, muffins, and pancakes. As the flaxseed has increased in popularity it can also be found in ready to eat cereals and bars. Or, one can simply grind the seeds and toss them on salads, vegetables, etc.

One caution is that some people may be allergic to flaxseeds.

Rachel Gillespe
<!--

What is your view?

Contrary to popular belief, adopting a vegetarian diet simply by eliminating meat is not necessarily healthier. Nor is it less fattening. Giving up meat totally does have some beneficial effects on your body. However adopting a total vegetarian lifestyle is more important as it will definitely result in a healthier body & mind.

The first thing to change when one thinks about adopting a healthier diet is to avoid JUNK food. Yes, you have heard me correctly. Everyone knows that junk food is - junk food. Your body is not getting any healthier with those sweets, chocolates, cookies, cakes, fries, pizzas. It also makes vegetarian fat too. So are instant noodles and many other pre-cooked or other fattening can foods. Being a vegetarian does not give you the freedom to indulge in large amount of those, so cut down.

Second, don’t cook with oil. But if you must fry with oil, use as little as possible. You might want to consider changing your style of cooking instead. Stir-fry, bake, steam and eating raw are some of the options available. Most hawker centre food like fried prawn noodles & carrot cakes (the hawker centre uncles and aunties are going to hate me for this) are cooked with large amount of oil. Animal fats are also added to make their food tastier. So watch out for those.

Thirdly, consume a wide variety of food. If you do not eat meat, you must try to consume other plant alternative to replace the nutrients that you would normally get from meat because no single plant is as nutritious as meat. (Surprise!)

Lastly, exercise regularly. You can walk briskly, climb stairs, dance, jog, or even cycle to nearby stores for groceries shopping. The trick is to fit it into your daily routine so that you will not be too lazy to move that body. Any form of regular exercises will help to increase metabolism which results in burning of calories. This in turns helps you to stay in shape.

Remember, nutritious diet and regular exercise is the key to a better, healthier body and mind.
<!--

It might be for the purpose of reducing suffering, improving ones health, environmental issues, or religious requirements. Just to name a few.

Whether is by choice or circumstances, leading an animal friendly lifestyle do make a difference in the world. By abstaining from meat, eggs, diaries and other animal by products from your life, you can make a statement against cruelty to animals, raise awareness toward environmental issues which results in helping to heal the earth, as well as gain health benefits. By supporting the production of vegetarian products through your purchases, you are supporting a more sustainable vegetarian lifestyle. It also helps to send a strong message to the society to become aware of a more humane way of living.

Contrary to popular believe of boring, tasteless dishes with limited choice, the fact is that you don’t have to go without your usual favorite food at all. Here are some of the many foods that are available.

You can get veggie burgers, hot dogs or sausages, tofu, minced meat, bacon, almond milk, soy milk, rice milks (mostly fortified with calcium, vitamins D and vitamin B12), non-diary ice cream, sorbets, desserts, cheeses, etc…from most supermarkets. You can even find a variety of vegetarian beers, wines, and champagne too, if you look hard enough. Not to mention the different types of fruits, grains, nuts, seeds and vegetables to choose from. And if you are craving for some more local food, you can also get chicken rice, rojak, mee rebus, mee siam, laksa, shark fin soups, and a whole variety of hawker food choices, from vegetarian food stalls & food courts that are scattered in many towns areas in Singapore.

So you see? There is an abundance choice of food and living a life of compassion by adopting the vegetarian way could most probably change your life for the better.
<!--

Going vegetarian solves much of your problem, because one of the prime sources for contamination is meat. But if you eat eggs, for instance, you need to be extremely vigilant about what you eat and how you prepare it. Because ovo-lacto vegetarians are still in danger of some types of food poisoning, and this is the level of vegetarianism you will most likely be striving for in your early stages, we will provide you with a guide to some of the most common types of food poisoning.

Typical food-poisoning symptoms are unpleasant but short-lived. They include nausea, vomiting, diarrhea, and abdominal cramps. Headaches, fever and muscle weakness may also occur. Levels of illness depend on the level of contamination, so be sure to see your health practitioner if you think you may have food poisoning.

Botulism - One of the most serious forms of bacteria shows up most frequently in canned goods. It is actually fairly rare, but to safeguard against it, date canned or bottled foods as soon as you bring them home and discard those that are more than a year old or are in swelling or bulging cans or in glass containers with bulging lids. Other signs of botulism in canned goods include discolored contents, spurting when the can is opened, and a clouding of normally clear liquids.

Salmonella - Salmonella is the most common cause of food poisoning and is found mainly in meat, poultry, and eggs. Avoid foods prepared with raw or undercooked eggs. These may include homemade mayonnaise, Caesar salad dressings, mousses, meringues, homemade eggnog, true hollandaise sauce, uncooked custard pie fillings, sunnyside up or over-easy eggs, or any eggs that are soft or runny. Symptoms begin twelve to twenty-four hours after eating contaminated food.

Staphylococcal Poisoning - This is a bacteria that occurs naturally in skin and nasal passages and is passed on via unclean hands, coughing and sneezing. Toxin-producing staph germs multiply rapidly, especially in cream or egg sauces, custards, or starchy salads, such as potato. Symptoms begin from one to eight hours after food is eaten, and include nausea, diarrhea and vomiting. After providing you with a few of the more memorable hours of your life, staphylococcus will generally be subdued by your body's defenses and disappear within one to three days.

Clostridium - This bacteria taints meat and other high-protein foods that are undercooked or left standing too long without refrigeration (on steam tables, for example, in cafeterias and all-you-can-eat restaurants. Symptoms begin six to twenty-four hours after tainted food is eaten.

Susan Carey
<!--

What it simply means is that the annual Vegetarian Festival is upon us once again.

This unique Thai festival had its origins on the southern island of Phuket some 180 years ago and has gradually spread to virtually all parts of the kingdom. Rather surprisingly, it is actually of Chinese origin and not really Thai at all. It began among the Chinese immigrants who had flocked to Phuket in the early 19th Century to work in the tin mines that once provided the island’s economy. According to local historians, about the year 1825, a mysterious epidemic struck the Chinese miners and their leaders met to discover the cause. They noted that the traditional Chinese rituals were being neglected, and the mining community was accordingly ordered to undergo a period of fasting as a penance. After nine days, the disease vanished as mystifyingly as it had arrived.

Now no one likes going hungry for days on end, so the village elders decided on a compromise. They vowed that each year on that anniversary the Chinese on the island would practice a period of cleansing by adopting a vegetarian diet. Offerings to the Chinese divinities would naturally be made and a strict code of conduct would be followed, which included sexual abstinence and foregoing the consumption of alcohol. As the years went by, something bizarre also took place. Individuals spontaneously began to be “possessed by spirits” during the festival and would take to impaling themselves with sharp object or slashing themselves with razor sharp knives. Yet once the spirit had left them, there would be no visible wounds or even the slightest scars. This Hindu like self-mutilation naturally drew Thai tourists to the island, and these Thais carried the idea of a vegetarian festival back to their home provinces.

Nowadays, the Vegetarian Festival is observed in virtually every fair sized city in Thailand. The yellow pennants one sees bear a Chinese character in red, with the Thai word “jeh” next to it. Both mean vegetarian. Any vendor displaying these flags will be selling flesh free food and the restaurants will have adapted their usual recipes to meatless cooking.

In Bangkok, the Vegetarian Festival is best seen in Yaowarat – the city’s picturesque Chinatown. It begins there on the first day of the 9th month of the Chinese lunar calendar with ceremonies similar to those on Phuket. Even before that, Chinatown residents will have started stocking up on vegetarian meat substitutes – usually high protein soy bean products, and it has been estimated that meat sales drop by as much as 70 percent during the ten days of the festival.

But the festival is not merely limited to Chinatown or the Chinese-Thais. Many ethnic Thais and even foreign expats welcome the change to a vegetarian diet, and perhaps one restaurant in five will switch over. In fact, vegetarian tourists have been known to plan their visits to the kingdom to coincide with this period.

The dishes offered during the Vegetarian Festival are nothing short of delightful. All of the Thai favourites are available, but with a slightly different twist. Instead of tom yam gung (spicy shrimp soup), there will be tom yam jeh (spicy vegetable soup). Gaeng matsaman, a delicious southern Thai curry made with chicken, potatoes, onions and peanuts, instead will have the chicken replaced by tofu. Gaeng kiao wan, a mild green curry usually made with chicken or fish, will now be made with soy protein. Mushrooms of all types will be used in abundance, and the big yellow Japanese soba noodles are used to produce a version of kweitiou pat Thai (noodles fried Thai style) that is well worth waiting for.

In fact, Thailand’s Vegetarian Festival is probably one of the best times to visit the country, even though it does fall within the rainy season. After all, you can always carry an umbrella. And the choices of food offered at this time of year rival the best of any cuisine that Asia has to offer.

So next time you come to Thailand, look for those yellow pennants. If it is not that time of year, just tell your waiter you want to try the aharn jeh, the dishes on the vegetarian menu. Most restaurants will have one. It makes a pleasant break from the usual meat heavy diet that is so common in the west.

Aharn jeh aroy mahk! Thai vegetarian food is delicious. Try it and see if you don’t agree.

John Turner
<!--

Some consider a meatless diet because they feel sorry for the animals. Others think a vegetarian way of eating will improve their health.

However, out of those well-intentioned people very few actually follow through and change their way of eating. The idea of completely giving up meat forms a big stumbling block for most.
For some reason, when it comes to vegetarian cooking, most people only see the "extremist" approach: either give up meat completely or you might as well include the meat in every meal. This "all or nothing" thinking becomes a mental barrier that keeps a lot of people from eating more vegetarian meals.

How about finding a happy medium? Drastic changes to one's diet never last. Do not beat yourself up for eating meat. There is no need to give it up completely. Just try eating a little less of it, that's all.

Start right now by making one meatless dinner every week. Keep everything else the same. Eating just one vegetarian dinner every week is definitely doable and easy. It will be just a nice change instead of deprivation!

If you think going meatless one day a week would not make a big difference, consider these simple numbers: if everyone ate vegetarian meals just one day a week, it would save one out of seven animals. Out of 92 million animals that are consumed in the United States alone every year, over 13 million animals would be spared. This is a huge impact!

In addition to doing good for our planet, you'll enjoy great health benefits by including more fruits and vegetables in your diet. Fruits and vegetables are rich in vitamins, nutrients, anti-oxidants and fiber - all the things that are good for us. They can help with weight loss and prevent diseases. Numerous studies show that diets high in fruits and vegetables reduce the risks of deadly diseases such as cancer, heart attack and stroke.

Also, by trying out new dishes, you will break your food routine and discover new tasty recipes and food combinations. It's really nice to eat something different once in a while instead of being stuck in a food rut.

This simple shift of mindset from "all or nothing" to a happy middle ground will do wonders. Vegetarian eating does not need to be a full-time commitment, sacrifice and strive for unattainable perfection. Just do what you can to eat a little less meat, have fun trying new vegetarian meals and enjoy the benefits.

Melanie Mendelson
<!--

Those that are vegetarians by choice can be divided into two general groups, those that do not eat meat, poultry or fish, but do consume dairy products as – in theory – the animals are not harmed or killed by the gathering of those products. Vegans, however, use no animal products whatsoever.

There are many health benefits to a planned vegetarian diet, as opposed to the unplanned vegetarian diets that result from poverty and a lack of food availability. However, there are also some special precautions that need to be taken to safeguard nutrition, as adequate amounts of some of the most important nutrients can be more difficult to obtain. This is especially true for those following the more restrictive vegan diet.

The body is a complex and delicate system, and the foundation of all of its functioning is chemical and electrical actions, interactions and reactions. The operation of this system rests firmly upon the balance of these chemicals. The majority of the chemicals in these essential physical processes come from the food that we eat, from the nutrients that come from its consumption. Thus, nutrition has a deep influence of the health of the body and the quality of its functioning.

Because the brain, like the body, functions on chemical reactions and electrical impulses, the processes of cognition, emotion, and so on, are also affected by nutrition. In fact, deficiencies in certain vitamins and minerals can result in mental illness and retardation, as well as cognitive dysfunction and difficulties and emotional instability.

The Vitamin B complex offers a perfect example of how vegetarians must pay special attention to their diets to ensure peak performance of body and mind. The Vitamin B complex is involved with every major system in the body and has a role in almost every important bodily process. It is essential to mental health and functioning, and essential to life itself. However, there are certain Vitamin B complex vitamins that need special attention by vegetarians, as vegetarians do not consume the richest sources of these vitamins.

The richest sources of Vitamin B2 are milk and organ meats. It is available in enriched breads and cereals, but care must be taken to consume the right amount daily. Niacin and Vitamin B6 are other B complex vitamins in which the richest sources are meats and, again, are available in smaller concentrations in enriched breads and cereals. Vitamin B12 is only found in animal products. It is important to note that vitamin B12, in addition to being important to the production of red blood cells, is essential for the normal growth of children.

Nutritional supplements can serve to enhance the health benefits of the vegetarian lifestyle. Indeed, they can serve to prevent the serious health consequences that vitamin deficiency can cause. Nutrition is especially essential for children, as their minds and bodies are growing and developing. If you are vegetarian or vegan, you may want to consider the complete, safe and reliable nutrition that dietary supplements can provide.

Simon Harris
<!--

Very typically, someone will pause for a second, then asked : "Oh! But you do eat fish right?" My typical respond would be a firm "no". Arrgh!

There are many types of vegetarian. A typical one would be a Vegan. They are the most religious of all. Not only does not eat meat, but also abstain from garlic, chives, shallots, ginger, daily products like eggs, milk, cheese, etc.... its the most difficult to practice and easiest to give-up because of it's rigidity. But I do admire them because it takes determinations, lots of great determination, to sustain.

Another type would be those that practice being a Vegan on certain days of the month. It’s the easiest to follow since you just have to stick to it on certain days every month. But let's not stop here. There is more to be done. Go Vege Go !

One type to watch out for is those that abstain from one or more types of meat. For example pork, beef, seafood (for these I suspect it’s more due to religion, mental or physical). Nevertheless, some form of abstain is a good beginning.

A typical gourmet like me settled for becoming a Lacto-Ova Vegetarian. One which omits all meat but eats anything else edible. So long as it does not promotes killing. This form of vegetarianism is the easiest to stick to and also most widely accepted among other practices. We still want to enjoy deliciously cooked saliva dripping food, don't we? Nah... So much for attachments!

You can choose one of the above style that typically fits in your daily routine to begin with. But whichever you chose, bare this in mind:-

The spirit of giving brings joy. But the joyous gift of all is the gift of life!

Cathy Liew (20th Oct 2006)
Thanks to Ming Chern for inspiring this topic.
<!--

I even had a cooking receipe club with about a hundred member on a Yahoo Group. Yeah, I have had my days of food. Glorious Food. I'm nostalgic you know? But now that I'm a full time vege lover, I can no longer hold on to the club hypocritically and so I decided to call it quit.

For now, almost 2 years after becoming an Lacto-Ova vegetarian brought about benefits that words alone could not describe. But people still keep asking me how I manage to stay at it for so long. And so this blog is born. May all beings be well & happy.
